    crispy kale, yeah!

    most veg are really low in calories, so celery sticks, carrot sticks, jicama, whole button mushrooms, pepper strips, pickles.

    pickled radish is really yummy!

    We make popsicles from our popsicle mold out of various juices, fruits, purees, etc... always ready! Plus, it takes so long to eat the popsicle and they are filling. Snacking crisis averted.

    We have lemon-lime popsicles in the freezer now. Still have 3 more to eat before we begin the next experimental recipe.

    One or two sunflower or pumpkin seed ryvita with something like plougman's relish/hummous/salsa/tahini+marmite on top seem to satisy crunch and salt cravings for me. They're wholegrain (I think?) so quite healthy, and as long as you don't drown them with toppings then they're not that high in fat or calories either.
    You could also try rice cakes instead of ryvita, or other crackers such as wholewhat, or see if you can find any flavoured rice cakes that are vegan (you can get salt and vinegar ones which are sometimes vegan, varies between brands though).

    Porridge is a filling snack, if he wants that kind of full, satisfied feeling. Maybe add some fruit to it as well?

    I know he's not keen on raw veg, but sometimes boiled veg with something like gravy or curry sauce on top can be nice as a night time snack. I've also been known to have vegetable soup as a midnight snack before but that might just be me!

    Rice crackers(crunch), cucumbers & hummus(salt). Since he doesn't really like veggies you can just slice them super thin, slap that on a cracker and top with hummus. Super easy for your body to break down quickly before you go to sleep. Cucumbers are basically water and chickpeas are protien so I think it's a winning combination and it's soooo tasty.

    Celery sticks with almond butter; carrots with hummus; air-popped popcorn; mini-pizzas made with english muffins, spaghetti sauce, vegan cheese, sliced olives, bell peppers, and whatever veggies I happen to have around; vegan berry parfait made with vegan vanilla yogurt, fresh fruit and granola http://www.instructables.com/id/Very-Berry-Parfait/ (while you're there, could you vote on it too ?)

    I'm partial to smoked tofu, myself. Can eat a whole block of it (200 grams like) just for the taste.
