    Default Cooking beetroot

    I'm about to harvest the first of my beetroots ... any suggestions of a dish to celebrate the first of the crop with?

    I'm thinking slow roasted with something nice (garlic for sure) .. maybe balsamic and thyme ...... or some maple syrup.

    What would you cook?

    I'm a boring sort - grate it raw, mix with some mayo and alfala sprouts and fill a sandwich.

    i'd probably roast it with other root veg rubbed with oil and dried herbs & i like the idea of a drizzle of maple syrup too.

    or a russian borchst soup? or a beetroot hummus??

    Too late, it's in my belly! did half with onion, garlic, thyme and balsamic and the other half with maple syrup. Served with chilli puy lentils cooked in wine with mint.

    Been too busy for taking photos of food lately.
