    Default Beets!

    I've read that they are pretty versatile as far as cooking (boil, steam, bake), but I'm hitting a wall with how to season them. I should make some borscht but its 90-some odd degrees and well, soup isn't sounding good. Anyone have any ideas? Not looking to make them as part of something, but more of a side.

    Dill goes well with beets. If it's hot, you can have potato salad with veganaise and some cubed beets and some dill pickle tossed in, as well as fresh dill and celery.

    garlic, thyme and beets are delicious when roasted together.

    Add maple syrup for a sweeter taste.

    I like a beet curry. I'm sure you can find a recipe or another vegetable curry recipe and just replace that veggie for beets.

    I don't season them too much, as I find they have a great flavor all on their own. My two favorite ways to make them are steamed, sliced and dipped in white vinegar or with potatoes and sweet potatoes mixed with Veganaise.

    I only really eat them with salad type dishes.
    They're very nice like rantipole said above... steamed, sliced and dipped in vinegar, but I prefer using balsamic to white
