Welcome. =) I have to avoid wheat for 2 weeks to see if I have a sensitivity to it because something's been making me ill for the past 3 months. =( I love wheat. It's not fair. BUT those pictures do make it look less of a chore...
This is an interesting thread! Although I don't eat gluten free 100% of the time, I do find that a lot of my meals are gluten free by nature. My Mom has Celiac and I am the family member that does the cooking for holiday get togethers. Now that my Mom is vegan I have been trying to find as many gluten free vegan recipes and foods for her as possible to help. There are a few vegan gluten free cookbooks out there but this is an area that still needs more development that is for sure!
Here are a few of my gluten free dishes:

buckwheat groats, almonds, blueberries, cinammon, oats (you can get these certified gluten free now but the ones in this photo are not).

I have found that as well, not huge amounts (especially when I make seitan) but quite a few of my favourite dishes are wheat/gluten free.
I was making Chickpeas Romesco from VCON this morning and realised that its wheat/gluten free:

firestorm I love those soups! The last dish looks really good too. I never used to be a fan of soup until I started making homemade ones a few years ago and now I love them. I don't know why I never think to photograph soups.
