What can I wrap some puff pastry around and serve as mini rolls?
I make nice chestnut bases ones, but am looking for new ideas.
No pre-packaged foods though, like cheezes.

i suggest....chickpeas!
sautee up some onions..herbs..whatever you like..drained half tin of chickpeas..mash em up..maybe a mashed boiled spud..black pepper..i don't know..something like that maybe? i bet it'd be nice :smile:

I reckon cooked lentils would be nice. I've never tried it though.

Hummus puffs! I put a dollop of hummus in each puff pastry and wrap it up. Careful because the hummus gets really hot inside, but it is sooo delicious! I eat these for dinner sometimes when I'm in a hurry. They're so good!
I make fabulous vegan sausage rolls & kids love them.
1 cup cashews (or other nuts) processed
1 tub soft tofu or soy cream cheese
1 small onion finely chopped
tablespoon fresh sage chopped
1 teaspoon fake chicken stock or veg stock powder
3/4 - 1 cup fresh breadcrumbs
Combine ingredients until thick and stodgey but mix holds together. If mix seems too dry and crumbly mix in some water slowly until you reach the desired consistancy.
Roll into long sausage shapes and place along puff pastry and roll up into 'sausage rolls'.
Bake in oven until browned on top.
Don't over bake or they may be dry inside. I think I usually bake them in a moderate oven for about 15 mins.
They really are a treat and the sage gives them an authentic sausage roll flavour without them tasting meaty.

I like to make them using a made-up packet nut roast mix, to which I add sage & onion stuffing mix, chopped peppers, mushrooms and sweetcorn. I part-cook this mixture in the oven, cool it, then spread it on my ready-rolled puff pastry sheet and make a big swiss roll type thing, Then slice into individual rounds and bake. Delicious, if I do say so myself!

Mashed potato and garlic.
Leek, broccoli and cheezly with a few chili flakes.
I love sausage rolls! I use a recipe similar to the one treehugga posted, usually using 1/2 pecans and 1/2 cashews, so yummy.
I couldn't be bothered with all that, we just buy Linda McCartney ones

Fry's do some sausage rolls now also.
