(My apologies if there is already a thread about lettuce wraps; I did a search and couldn't find anything)
So I've been on a lettuce wrap kick lately. I like eating them better than tortilla wraps, because you don't get all those refined carbs from the tortilla, and the lettuce is so nice and crunchy with the filling.
I have a few good filling ideas, and wanted to create a thread for people to post more ideas. Here's one I tried yesterday (I brought it to a barbecue and everyone laughed because it was so "typical": a vegan brought lettuce wraps to a bbq! But they stopped laughing when they tried my grilled pineapple with coconut milk dip )
Mexican Lettuce Wraps
2 tsp cooking oil
1/2 small red onion, diced
1/4 red bell pepper, diced
2 (or more) garlic cloves, minced
2 green onions, sliced
1 cup cooked black beans
2 cups cooked rice (any kind)
1 cup tomato salsa
1/2 cup fresh or frozen corn
1-3 tsp chipotle chili sauce
salt and pepper, to taste
1/4 cup fresh chopped cilantro
2 heads of iceberg lettuce
1. Heat the oil in a pot on medium heat. Add the red onion, bell pepper and garlic and heat, stirring, until the onion is translucent.
2. Add remaining ingredients (except cilantro and lettuce) and cook until heated through. Remove from heat and stir in cilantro.
3. Cut the large stem off of each head of lettuce, then carefully remove the leaves without ripping them. Rinse and place on a plate for diners to make their own wraps by scooping filling into each leaf and wrapping the leaf around the filling.
