How to make a "cream of" soup vegan- easy!
This is general recipe that you can refine and use for any vegetable you've got that you're not sure what to do with: asparagus, brocolli, potato, carrot etc. There are a couple examples below to give you an idea, but just use whatever you've got that's fresh, delicious, and hopefully organic.
Basically just take your vegetable and boil in a small amount of water until mostly soft and cooked, but don't overcook! Add in spices and seasonings: whatever you like to use: fresh basil, pepper, oregano, garlic powder, mild chili powder etc etc.
Meanwhile, sautee a whole chopped onion or leek in olive oil until cooked. Add some soy sauce at the very end. Leeks are always a great base for soup and are healthy and cheap.
Save just a few of your cooked vegetables to add later for texture and color.
Now take your cooked vegetables and onions and put in a blender with about 12 ounces PLAIN soymilk and blend. Often you'll have to have an extra bowl as you'll be making more than one blender-full of soup. Pour back into pot and cook 3 minutes. Add in your cooked, sliced, vegetables you put aside and enjoy!

Vegan Cream of Carrot with Fresh Lemon and Dill, and Tahini Pita
To make cream of carrot soup boil fresh organic carrots in just enough water to cover them in a pot. Then use the same basic process already listed above: Add seasonings, sautee a whole onion or leeks with lots of olive oil, add soysauce at the very end and combine in a blender with soymilk, and return to pan and reheat. For this one try adding a fresh squeezed lemon at the end and top with dill.Super good for you!
