Reading the book I bought in Italian on raw food (called "Solo Crudo" = "Just Raw"), there was a lengthy chapter on proteins but nothing on carbs. I'm aware that vegetables have a carbohydrate content, some more than others, but don't we need slow release carbs (brown bread, rice, pasta) for optimal energy? Having said that, these are foods I naturally tend to shy away from, but I'm curious to hear what the raw food literature says about carbs for 100% raw vegans.
