Hello - if you search the web there are some listings for veg*n bed and breakfasts and so on, like this one - http://www.vegetarian-vacations.com/...st/france.html - not sure how up-to-date some of them are though. The French word for vegan is végétalien so you could try searching with that too.

I go to France quite a lot and I have to say the vegan scene doesn't seem all that well developed, though Paris has a number of vegan-friendly restaurants. There are some forum members based in France who will know more about it than I do. Bonnes vacances
