We used to experiment quite a lot, but most of all I enjoyed the classic kappa maki (cucumber rolls with sesame seeds) and avocado maki (avocado rolls).
The thing about sushi is you can stick anything in there. Any veggie that tastes good can go into the sushi roll. You can make it non-traditional and add fake cheese or a fake meat of some sort. They have fake shrimp to add in, you can throw in avocado...
The choice is yours my dear.

My favorite is fried tofu, apples, carrot, and cucumber. A place nearby my school calls them ivy rolls, and I would leap through flaming hoops for some.
you can do anything with sushi, it's so variable!
any fillings with vegs, tofu, seitan, leaves, whatever... or using shredded vegs instead of rice...

I love avocado rolls, marinated tofu rolls, cucumber rolls, mixed veggie rolls. I like the "inside out" version though with the rice on the outside of the roll.

Next time I make sushi, I'll have to give that a go. It'll confuse my poor husband though.
