Last week went I went to Soulmama for dinner, I had some Barley Bake with Kumara (sweet potato) Mash. I liked the concept of the dish, but the flavourings were not my cup of tea - so I decided to recreate the dish to my liking...
- 800g sweet potato, chopped
- sea salt to taste
- 1 cup pearl barley
- 1 tsp olive oil
- 1 onion, chopped
- 2 cloves garlic, crushed
- 150g mushrooms, sliced
- 20g fresh rosemary, finely chopped
- 20g fresh dill, finely chopped
- 20g fresh basil, finely chopped
1. Boil the barley until soft, and all of the water has been absorbed. At the same time, steam the sweet potato until it is very soft.
2. While the barley and sweet potato are cooking, saute the onion and garlic in the olive oil until it has browned. Add it, as well as the can of tomatoes, mushrooms and herbs to the cooked barley. Transfer it to an oven safe dish.
3. Mash, or puree the sweet potato, with sea salt to taste, until it is thick and creamy. Top the barley with the sweet potato
4. Bake in the oven at 150 C for around an hour
