Yes it does sound nice, sort of Thai gazpacho I wonder if mango chutney would do instead of the sauce, which we presumably can't get here?

I'm sure any good Thai sauce would work; I thought the sweetness of the mango went well with the cucumbers and the acid from the tomatoes. Too bad Curry Simple is not in stores. I have to order it online here too.
