Regarding animals feeling empathy, in The Inner World Of Farm Animals, there are stories that I believe demonstrate this. It is most obvious among the extremely traumatized/sick animals who are then looked after by other "veteran" animals at the sanctuary. It's very sweet.

I need to find this book. I have personally felt empathy and nuturing of cows and pigs-- my grandfather ran a farm. once I was crying and a cow used her head to wipe away my tears. I loved Cows ever since.
