    Default replacing oil with apple sauce in dumplings?

    In a recipe book i have, it has a recipe for a mushroom stew with herb dumplings, however the dumplings are made with vegetable oil. I am wondering, would the purpose of the oil be to bind, in which case could I simply replace with an appriate amount of apple sauce? I'm thinking the applesauce will add a nice complimentary flavour, but want to make sure I'll actually have dumplings rather than crumbs at the end!.

    whats wrong with the oil? I use egg replacer for a binder when I make my dumplings... I think the apple sauce might work.

    I wonder if applesause would work as a binder in scones? I miss having scones with my tea.

    oooo apple sauce works fairly well as a binder in my experience...so does banana, but banana really affects the flavor.

    You can make dumplings with flour, salt, herbs, baking powder and soya milk.

    i make potato dumplings with mashed potatos, egg replacer, and flour. Its a secret family recipe...that isn't so secret anymore i suppose...

    I've never made scones using eggs... just rub the fat (marg) into the flour and then gradually add "milk" (soya milk, rice milk...) till you have a soft dough. Roll out, cut into scone shapes and bake. No eggs required.

    Vegan Scones

    (Recipe from "Vegan Feasts" by Rose Elliot).

    1 and a half cups all purpose flour (wholewheat, or half white half wholewheat)
    2 teaspoons baking powder
    Quarter cup vegan marg
    Half cup soya milk or water

    Sift together dry ingredients, rub in fat.
    Add liquid gradually to form soft but not sticky dough.
    Roll out to thickness of at least 1cm/half inch.
    Cut out using scone cutter, place on baking sheet, bake at 220°C/425°F for 12-15 mins.

    My OH has always made excellent scones (date scones being my favourite) and has never used animal products in them, even before we were veggie.

    Also, she's been experimenting with 'cheese' flapjack. This is savoury flapjack with yeast flakes. They're crumbly but delicious.
