    Default Carrot help

    I've made carrot burgers, carrot cake, carrot sandwich spread, carrot soup and carrot casserole and still have millions of carrots left.
    I need an amazing recipe for carrots that we will never get sick of and which I can freeze in batches - anyone?

    Why don't you just freeze them in carrot form then you can just add them to dishes as you need them.

    The pickles and chutneys sound a good idea - I've had pickled carrots in Lebanese places and they were very good. Also maybe you could freeze them as a puree and then use them for thickening soups and things as needed.     If you like, you can also have a go with this Turkish carrot pilaf, that got me eating carrots like never before. I understand that you can also freeze rice dishes, though I've never done it myself.

    • 2 cups rice (brown is very nice)
    • 2 cups grated carrot
    • 1/2 tsp whole peppercorns
    • 3 1/2 cups veggie stock or according to packet instructions
    • 2 tbsp olive oil
    Sautee the carrots and peppercorns on medium heat until the carrot is soft. Add the rice and stir until well coated. Add the stock, cover and turn heat to low until the rice is done. (You can also add salt & pepper at this stage, but I don't find it necessary.) Remove from the heat, place a clean towel over the pot with the cover on top and let it stand for 5 minutes and serve.

    oh..i made some of this yesterday..i totally bet it freezes. greenspex made it for vbbs party thing last year? you probably had some, i'm sure.

    couple of carrots
    half an onion
    2 slices bread
    5oz cashew nuts

    1tsp marmite type stuff
    1 tsp tomato puree
    1tblsp warm water


    grate really finely the carrots..really finely slice up the onion..breadcrumb up the bread..whizz up the cashews..into a bowl and mix it up well.

    mix the last 3 ingredients and stir into the first four till it's all smooth and fridge it for a bit. or freeze it. can't see why it wouldn't freeze. it's really nice in bread with salad and that :smile:
