    Default Chocolate Brownies

    Hello,

    I am currently on a quest to make a decent chocolate brownie. I have tried many many recipes but struggled to get the chewy outside mixed with gooey inside. The best I've had were from Herbies in Exeter, but I've not managed to find an email address to be cheeky and ask for the recipe.

    The best results I've had so far are from this one:

    However, they are sometimes a little greasy and too 'cakey', if anyone has any alterations or another recipe I could try, I'd appreciate it.

    Hints and tips would also be wonderful!

    it IS difficult getting that crusty topping with the gooey middle isn't it?
    have you tried cutting up some dark chocolate squares and either put a layer of brownie batter in the pan, then sprinkle some chocolate chunks over it and top with remaining batter, or, mix the choc chunks into the batter when you pour it all in. the melted choc chunks can make it very gooey in the middle!!

    ^ yes I agree Cherry - that seems to work with any recipe! I tend to cut down the cooking time and then leave them in the baking tray to cool

    Thanks for the advice. I've actually experimented with the cooking time, a lot. Due to the fact they need to be gooey on the inside and chewy on the outside, adjusting the cooking time anymore is not really an option.
    I've also added some extra chocolate too, to get the gooeyness, whilst doing that I've decreased the amount of oil added to the mixture but then felt that it was becoming more of a cake consistency. I think I may well just make them thinner and try from there..

    yes, i think thinner will be better - less thick and cakey but make sure the cooking time is adjusted as they may need less time if they are thinner.

    I made some last week with soft brown sugar (y'know, the fine soft crumbly sort, not demarara) but then overcooked them and ruined the experiment! D'oh. Anyway, I tried again on Thursday night and they were really nice and gooey/chewy. I put a few plamil chocolate chips in them too as suggested by Cedarblue, and sprinkled some more on when they came out of the oven.

    Thanks for the info Cherry, I bought some soft brown sugar today so will try it with the next batch.
