An excellent subsitute for hamburger is believe it or not...cooked bulgur wheat.
Sounds great, but I can't use it. My wife is highly allergic to wheat. She has a reaction even from the tiny bit of wheat in soy sauce, so I have to be careful even with the hamburger substitues, since many of them are made with soy sauce.

Gotta be gluten-free.

On that note, I got a book for Christmas I'd like to recommend. Kind of goes to the OP: Gluten-Free Vegan Comfort Food: 125 Simple and Satisfying Recipes, from "Mac and Cheese" to Chocolate Cupcakes. It's by Lara Ferroni and Susan O'Brien. Haven't tried all the recipes, but the ones I have are quick, easy, and tasty.
