I have a box of silken tofu in the fridge which will go out of date soon. Any ideas for recipes (low fat/low sugar)?
Thanks

Ready to eat or soaked dates blitzed up to a puree and then all blitzed with the tofu until smooth makes a nice toffee type sauce that goes well with sliced banana.
"Danger" could be my middle name … but it's "John"
Ah.. low fat, low sugar.... not chocolate cheesecake then! That has about a million calories per cubic centimetre.
You could make scrambled tofu out of it (onions, turmeric, soy sauce, herbs etc... ). I know some people who prefer it with silken tofu.
I often use silken tofu to make a soup thick & creamy - roasted butternut squash, or tomato & red pepper. Also, I second the scrambled tofu suggestion. The spice mix in the Veganomicon recipe is soooooooooooooooooooo good

I've put it in the blender with some sundried tomatoes and various herbs, blended it all up and then heated it and used it as a sauce for pasta.
Puree tofu with rice or soy milk. Add salt and garlic. Pre-bake a pie crust. When cool add wilted fresh spinach and thinly sliced onions and mushrooms. Pour pureed tofu over and bake in 350 degree oven til set.
I looove tofu scramble. Shallow fry onions with herbs and some chopped peppers, add tofu when peppers are soft, black pepper and more herbs to taste
The greatest mistake is to do nothing because you can only do a little.
blend it up with wilted spinach, add engevita & co to make a sort of canneloni stuffing rictottarish/lasagne filling
