Does anyone have a good recipe for soft white rolls?
I'm working on my own recipe but there's only so many rolls you can eat in a day so progress is slow.
The recipe I started from was this;
- Water - 250ml
- Egg - 1 Medium
- Margarine - 2 Tablespoons
- Salt - ½ tsp
- Sugar - ¼ cup
- Strong plain flour - 520g (3¼ cups)
- Yeast - 2½ tsp
- Topping Margarine, melted
- Put all ingredients in bread machine on pizza dough setting.
- Divide dough in to 15 and shape each piece in to a ball.
- Allow to rise for 30 minutes
- Brush with margarine
- Bake for 15 mins (180c/Gas 4) or until golden brown.
and I've adapted it to this;
- Water - 250ml
- NoEgg - 2 tsp
- Olive oil - 30g
- Salt - ½ tsp (or ½ tsp msg)
- Sugar - ⅛ cup
- Strong plain flour - 520g (3¼ cups)
- Yeast - 2½ tsp
- Topping Water
- Put all ingredients in bread machine on pizza dough setting.
- Divide dough in to 8 and shape each piece in to a ball.
- Allow to rise for 30 minutes
- Brush with water
- Bake for 15 mins (180c/Gas 4) or until golden brown.
I cut the sugar in half because they were far too sweet, replaced the egg for noegg for obvious reasons. Switched the margarine for oil because I prefer to use an ingredient like oil than a product like marg. Tried swapping the salt for msg for extra flavour, it didn't make a noticable difference but I suppose it means less sodium at least. The melted margarine to brush on top is just a waste as far as I can see, brushing on water makes them go golden just as well. I also reduced the number of rolls, because I wanted them bigger.
They're okay, I'd like them to have more flavour though. I tried using 1tsp of salt but that was too much and killed the yeast, I might try 1tsp msg instead to see if that works any better. I've also now run out of Noegg so I need an alternative, any suggestions?
