    Default Spinach recipe TO DIE FOR

    I just had this for lunch and I thought I had to share it with all of you because it is uber delicious! (and very easy to make)

    The original recipe has potatoes in it but I had mine without (there were no potatoes around...). However, I guess it's good either way. So I'll give you the recipe with the potatoes in it and you can choose whether to have them or not :P

    70g olive oil
    6 garlic cloves
    250g potatoes, cut in slices
    50g raisins
    250g cut up spinach
    1 tsp margarine
    30g pine nuts
    1 vegetable stock cube
    A splash of vinegar
    Black pepper


    1. Chop up the garlic. Cook it with the olive oil
    2. Add potatoes and cook
    3. Add raisins, spinach, margarine, pine nuts, vegetable stock and black pepper. When the potatoes are ready, add a splash of vinegar and serve.

    I don't trust raisins...i'm pretty sure they are trying to take over the world....but i like spinach.

    It seems like raisins are not very popular around here ! :P

    You should give them a try, I'd say they're essential to the recipe! And they taste different after "cooking" them (don't taste as strong)

    How long do you cook the potatoes? Surely the garlic burns if you cook it and then cook it again with the potatoes. The tsp of margarine seems a bit redundant too.

    It sounds like my kind of dish though, I might try it when I don't have to cook for an anti-raisin person.

    I would boil or microwave the potatoes until at least half cooked before doing this recipe. It will help speed up the cooking time. I recommend boiling as it has a better texture but microwaving will work for the ultra lazy.
