Ingredients:

(to serve one, two... whatever! You work it out!)

* Piquante peppers (they come in a jar)
* 1 leek
* risotto rice
* peas
* olive oil
* veg stock

Chop up the leek, and add to a pan of heated oil for 10 mins; add the rice and more oil, stirring for further 10 mins; add the veg stock, and the peppers (include a little preserving fluid for added flavour); cook to taste: when the rice is near-done add some more stock and the peas. Keep tasting till the rice and peas are cooked. This is it. Just erm, keep stirring.

Takes about 30 mins and really tasty. Not very expensive either, £6 or so, and a couple of meals out of it.
