I created this recipe today combining a few recipes together:
2 cups soy milk
1 bag semi-sweet chocolate chips
3 Tablespoons unsweetened cocoa
1/3 cup maple syrup
2 Tablespoons corn starch
1 Tablespoon vanilla extract
Melt the chocolate chips in the soymilk over a double boiler (I used a metal mixing bowl in a saucepan), add the cocoa and maple syrup. Whisk until the mixture gets really, really hot. Add cornstarch and whisk until it boils. Let boil for a minute. Remove from heat and add vanilla. Pour into tray or individual serving dishes and let cool.
This is a very rich dessert but absolutely delicious.
