I have had many failed attempts at baking sandwich cakes, yesterday being my latest. They turn into a crumbly mess. I have had one success and that was with a chocolate cake - it stayed in one piece but was so moist that it was less a cake, more a torte. I think it was the melted chocolate in the recipe that made it all stick together but I'd like to make sandwich cakes that aren't chocolate! I have used different types of egg replacers but nothing seems to make any difference. Cupcakes work fine with me. I'd really really like to know if anyone has any tips because I have a couple of events coming up where I'm setting up stalls selling vegan cakes and I don't really want it to be just cupcakes!
