    Does anyone know where you can purchase seitan or seitan mix in the UK? I can't seem to find any online.

    Have you tried to search for Gluten? That's what "seitan mix" actually is. I don't know about the UK, but here it is available as Gluten in vegan shops.

    Thanks Veganina, I searched for gluten and found some here if anyone else is having the same problem. I presume this is the same thing?

    The only place we could find it in the UK was a website called 'The Flourbin' where they sell it as 'vital wheat gluten' or 'gluten powder'. It's 1.95 for a medium sized bag but that will make at least a couple of batches. Trouble is that they have a 10 quid minimum order so we ended up getting a couple of packets and some other flours too. Can't remember how much delivery was. There are loads of recipes for seitan and my other half has always found it easy to make with the gluten flour being the only difficult to get hold of ingredient (everything else is a larder staple really). Hope that helps!

    http://www.lowcarbmegastore.com/ and http://www.honest-to-goodness.org.uk/ also sell wheat gluten powder/vital wheat gluten. It can sometimes be found on Ebay too.

    Mock duck, as sold in cans in Holland and Barrett, is flavoured seitan so you could try that if you prefer not to have to make it. Veganstore.co.uk used to sell a seitan mix but they don't seem to have it at the moment.

    Another (in my experience really good and comparetively cheap) alternative would be to make your own seitan out of regular white (405) wheat flour.
    Some people are not happy with the texture of seitan they get from pure gluten powder, so they add some flour to the mix to improve it (make it softer, less rubber-like). You should get the same effect if you make your own seitan from wheat flour but do not wash it completely (till the water remains clear and does not turn white anymore), but kind of almost completely.
