I kind of threw this together, so the measurements are total guesses. I'm sure you can feel it out as you go. It turned out really tasty and egg-like! If anyone decides to try this feel free to help me out on correcting the measurements.
Eggless Fried "Egg"
1 block firm tofu, rinsed and gently squeezed between paper towels
black salt for sulfur taste, but use regular salt if you must
1 Tbs vegan margarine
1/2 c nutritional yeast
1/2 tsp turmeric for color
1/2 c warm vegetable broth
1 Tbs liquid Aminos
3 Tbs arrowroot
splash white cooking wine
Preheat oven to broil. Cut the tofu horizontally into as thin of slices as you can without them falling apart. Spray a non-stick baking sheet with oil. Lay the slices side by side on the baking sheet. Spray the slices with oil and liberally season with black salt and pepper. Broil until edges start to crisp ~10-15 minutes. Flip each slice and broil for another 5-10 minutes.
Meanwhile, melt margarine in a saucepan over med-low heat. In a bowl, whisk the arrowroot into warm broth. Stir nutritional yeast and turmeric into the melted margarine. Add a splash of cooking wine. Stir. Pour the broth into the pan, raise heat to simmer and whisk constantly. Add arrowroot until you achieve desired consistency. Stir in the Aminos and remove from heat.
Once tofu is finished serve on toast with a spoonful of "yolk".
