    Default Cream of Mushroom Soup

    I found this recipe on the internet and it's quite nice! (although very filling) It makes a very very creamy soup.


    • 3/4 pound fresh mushrooms, sliced
    • 1/2 small onion, diced
    • 2 cloves garlic, minced
    • 1 tbsp vegan margarine
    • 3 cups vegetable broth
    • 2 tbsp flour
    • 1 cup vegan non-dairy sour cream substitute
    • 1 cup soy milk (I used cashew cream instead)
    • salt and pepper to taste


    In a large soup or stock pot, sautee the mushrooms, onion and garlic in vegan margarine for 3 - 5 minutes, until onions are soft. Reduce heat to medium low and add the vegetable broth. Cover and allow to simmer for at least 45 minutes.
    Add the flour, non-dairy sour cream and soy milk, stirring well to combine. Allow to simmer another 20 - 30 minutes, or until soup has thickened. Season generously with salt and pepper before serving.

    mmh, sounds very tasty, I was just thinking about making a creamy mushroom soup! I was just looking online for a replacement for the sour cream since you can't buy the one you linked here, this apparantly is a good replacement, I hope it holds its own in a warm soup and not split!

    tried making some mushroom soup tonight, using coconut milk rather than sour cream and blended it. It was amazing, at first it was very rich so added some soy milk and I'll certainly be making that again, thanks for giving me the idea to do it.

    Awesome! Creamy mushroom soup is one of my favorite foods.

    That sounds really yummy. I love mushrooms, but haven't tried to make vegan Cream of Mushroom soup yet. Thank you!
