    Default Low Fat/Cal Sunday Roast Ideas?

    Can anyone suggest any low fat/calorie options for a healthier sunday roast dinner? I was having grassingtons chicken style fillets which were great, low in fat and delicious, but they stopped making them

    Now I've been having nut roasts and as well as getting bored with them, they're too high in fat/cals for me to eat regularly. Anyone got any other ideas?

    Baked tofu = super yum! I'm not a huge fan of grain-based roasts--don't get me wrong, I love seitan dearly, but I don't like eating too much wheat gluten at once--my stomach gets angry with me. Tofu, on the other hand...

    Does it have to be a roast-style dinner? Or you could do roast butternut squash?

    Pusskins - need help mainly on my Sunday roast dinners, as I'm ok at making fat free dinners at other times, e.g lentil casseroles, soya chilli, etc. I tend to roast a butternut squash for my soups

    Llyn - I live in the UK so we can't get Tofurkey (as far as I'm aware)

    How about baked stuffed peppers, courgettes or tomatoes? The stuffing doesn't have to be high-calorie, you can use mostly chopped vegetables such as mushrooms and spring onions with just a handful of breadcrumbs and ground nuts. I always think stuffed things look a bit festive .

    I have seen Tofurkey here, in Wholefoods in Kensington High St, but it cost an arm and a leg. I guess you could just marinate and bake some tofu though, and have it with a sauce.

    It's not a tofurkey product--it's a recipe for making your own tofurkey! All you need is firm tofu, seasonings, and whatever you want to use as stuffing.

    So it is! Doesn't look too complicated, and unless you had a very large family there should be plenty of leftovers

    those massive meaty mushrooms marinated in something yummy and baked/grilled/roasted might be good? dollops of mashed spuds, plenty of veggies, chickpea gravy and so on?

    Yum, you talked me into it, emmap. Not sure I've ever had chickpea gravy though, how do you make that?

    ETA talking of chickpeas, socca (sort of Spanish omelette made of chickpea flour which you can either fry or do in the oven) might be another option.

    chickpea gravy is the business harpy!
    its a recipe from vegan with a vengenace..and a 'silky' version is in appetite for reduction.

    i've bastardized it a little to suit my culinary needs..but its pretty much this -

    cook up and onion in some fry light or oil or whathaveyou, couple of bits of garlic
    put in some mustard seeds (important bit that)..other herby bits...thyme, cumin, coriander seeds, smatterint og oregano, sprinklage of cracked black pepper..or indeed whatever you have in your cupboard that appeals

    pour in a tin of drained chickpeas and stir it about a bit, mash them up a bit. i put in a blob of essential yeast extract at this point, or a blob of marmite if you like or some generic non evil brand of yeast extract, i use essential (did i mention that ;0))

    put in some boiled kettle water, maybe a sprinkling of marigold stock powder.. just a bit so it scrapes up all the possibly burny sticky bits from the bottom of the pan
    stir it about some more..add more water..cook it simmerstyle for about ten minutes.
    slart of soya sauce..squeeze of lemon juice

    when your onions are cooked through put it in a jug and blitz it up, itll look thicker and browner.
    lavish some mashed pototoes with the joyousness of it.omnomnom

    That sounds delicious - thank you. I usually make gravy just with onions, mushrooms and herbs so that would make a nice change.

    I like to make the tofu roast from Sarah Kramer's La Dolve Vegan. It takes a long time to make but is so worth it. I've also experimented with the recipe to make some quick and easy tofu roasty things.

    Thanks Glen that sounds good too I don't suppose you can make a big batch to freeze remainders? Don't think it's wise to freeze tofu? :/

    Yes, tofu that's been frozen is good, but it does have a different texture so I suppose freezing a composite dish with tofu in it might produce unpredictable results? Interesting to try though!
