Have you tried sweet potato, chickpea and spinach curry with coconut milk?
I hope you thought of something, AzureAngel? Kumara is like sweet potato is it? If so I would imagine they'd make a nice curry or casserole in combination with chickpeas.
Thanks guys, yes I ended up making a curry. It actually came out quite good. I just made it up as I went along. First Vegan curry I attempted and I liked it. I didn't have any coconut milk, but I will try adding that next time.
1 small onion
2 large kumara (yup, sweet potato) pealed and diced.
About a regular can worth of chickpeas (soaked some dry ones the day before)
3 large tomatoes (finely diced)
juice of 1 lemon
2 TBSP of Hot curry powder
1 large courgette sliced
1 small stick of cinnamon
1 TBSP brown sugar
Mixed the tomatoes and lemon juice to stand while the chickpeas and kumara boiled.
I then fried the onions once the chickpeas and kumara were boiled and drained, adding the kumara after the onions were lightly browned. Added the curry powder and cinnamon stick.
Then added the tomato "sauce" and let it boil a bit in it.
Added the chickpeas and brown sugar and stirred it through.
Added the sliced courgettes as I like them to be crunchy and not too boiled. Let them soak up the flavor a bit and served.
Was quite good for a "what do I have in the house curry"
