I made my own thai invention: egg-free udon noodles, coconut milk, peanut and chili paste, curry, cashew nuts and mixed veggies. It was so damn creamy and delicious!
anddd.. for dinner, banana and chocolate chip pancakes! first time I ever made them vegan and they were SO amazing. Even better than the ones with eggs and milk in it. My best friend even told me so, she said she didn't know we vegans ate yummy stuff!
The noodles aren't much to look at, but from the description I bet they tasted amazing. And the pancakes look as good as they sound! Silly friend for thinking that vegans didn't eat well - bet she won't make that mistake again!

I think I'll have to try it, I'm getting a bit bored of having the mozzarella all the time, much as I like it.

Then diced red onion, chopped Redwoods pepperoni, griddled courgette, mozzarella cheezly and olives.

The courgette was very good. I griddled slices dipped in olive oil with salt first in my sandwich toaster (tesco foreman style grill)
This was to get rid of all the water that comes out of it when cooking, and to give it a nice chargrill flavour.

Sorry I think I went overboard. I am just so excited to share! I have done more food experimenting in the last year as a vegan than I did in my entire life before! My cooking, baking, food preparation, and appreciation for good whole food has increased exponentially. I am still looking forward to so much more too!

It was really nice, and tasted surprisingly like a real cornish pasty, but next time I'm going to put in way more filling. I was a bit tentative this time cause I didn't want the pastry to burst when it cooked..

Thanks leela! The tapioca pudding was good but it didnt taste quite the same as the tapioca I was used to years ago. I used coconut milk to make it which may have contributed to it tasting different but it was still excellent! Most tapioca pudding recipes call for eggs but this can be worked around.
I cant remember the exact way I made the chocolate ganache but I believe I simply used dark chocolate (broke up a few 100% cacoa bars) heated on a double boiler with almond milk, vanilla extract, a little brewed coffee, and maple syrup. Some recipes call for margarine but I didnt use any. I like to take a few recipes for the same thing that are slightly different and mix and match them to make it work. The ganache dried very smoothly over my cake (I simply poured it over the cake and then used a rubber spatula to spread it around evenly) and was wonderful!
Yes, they were really really good! Especially the last one! Lucky for me that I was alone when eating it, I sounded like a complete nut-case, 'mm'-ing and 'aah'-ing the entire time!
