Speaking of the toasts, I had never heard of eating beans on toast until I became vegan. Now I do it a lot. When I tell others this, they look at me like I'm some kind of weirdo. Is this a British thing, beans on toast? Or more of a vegan thing?
Trust me, NOBODY would look at you weirdly if you ate beans on toast in England. =)

Thanks everyone! It was my first time making them and I'm not sure if I made them right, but they were well tasty!
The tomato sauce was Old El Paso fajita sauce, and the cheese sauce I made with Redwoods soya-free cheddar, Kara coconut milk, nutritional yeast and flour heated together in a pot.
Put some fajita sauce in the bottom of an oven dish, put some sautéed veg on in tortillas (I only made two), roll it up, put in the dish, cover it the fajita and cheese sauces and bake in the oven at 200c for 25-30 mins.
@Robinwomb- baked beans on toast are popular in Ireland too, not just in Britain
Wow, those baked beans on toast photos are making me very very hungry! Very occasionally I will eat vegetarian canned baked beans on toast. Mostly I have been eating black beans with spices and tomatoes on toast or a white bean or chickpea spread on toast. I absolutely love the whole concept. Very filling and has staying power.

Sausage and bean stew (Baked beans, chopped toms, tomato puree, herbs, lentils and chopped cooked Linda McCartney's added in at the end)
Kale Colcannon (Mashed potato, Vilalite, splash of soya milk, couple of tablespoons of nutritional yeast, fried onions and a pack of wilted kale)
It's become a firm favourite with my 4yo...when she isn't eating with us I make it with smoked paprika instead and it tastes spookily like chorizo sausage stew.

Poutine is a Canadian thing. It's fries (chips) covered in vegan cheese and veggie gravy. It was so good that we recreated it today (although a healthier version w some sweet potato fries and tofu cubes).
What did you season it with Dermosthenes? I've been craving some veg over rice but I'll need something really yummy as my wife - who grew up with an Indian stepfather and therefore a LOT of rice - gets sick at the sight of rice!

I like to eat my stuff near naked. The brown rice was served plain, and the vegetables had 1 1tbsp olive oil, a dash of salt, and a sprinkle of dried dill. The extra oil did settle into the rice a little bit for seasoning, though.
I made the kale curry a few days ago, all the others I made some time ago. Interestingly, with the crumpets, I had a heck of a time finding crumpet rings. Even the specialty baking store in my city did not carry them but after mentioning to them the trouble I was having finding them they ordered some! Yeah! I didnt want to order online for something that isn't that expensive. Crumpets are not common in the U.S. but English muffins are. Crumpets however are much easier to veganize than english muffins.

Last Saturday I was on a roll and in the mood to cook. So I made a few out of the ordinary dishes:

Homemade Energy Bars with White Beans My husband has been happily munching away on these
and he has no idea that these are made with Great Northern White beans in them. They work great as a binder and absorb the flavors of the spices and agave well. Also included are dates, pecans, almonds, oats, agave, raisins and coconut.
[IMG] Tofu Butternut Ricotta Stuffed Manicotti [/IMG] I got this recipe from Vegweb (they used shells to stuff instead of manicotti). There is no vegan cheese whatsoever, not even nutritional yeast,
and you would never know it. The butternut squash and firm tofu combined with spices and lemon juice adds a rich texture and flavor all by itself and the marinara sauce was a great addition. Awesome dish!
