wow okay that was easy! When I tried to do that before, the preview of it was SUPER big, and I got a bit scared, but it's nice it auto-resizes it for you. Thanks a lot
Both slices are wholemeal pitta breads with Zest pesto, chunky tomato sauce and mushroom slices, the first slice has black olives and Redwoods soya-free cheddar and the second slice has kale and carmelised onion houmous.

I woke up this morning really hungry, but too late for breakfast and too early for lunch so decided to have brunch instead - Individual baked hash browns (Vegan Brunch), Fronch Toast (VWAV), Scrambled Silken Tofu, Fried Mushrooms & Tomatoes, Relish. The picture quality is a bit naff (was in too much of a hurry to start eating) so I've put two up:

Ratatouille made with home white onion, red onion, garlic, home grown yellow courgettes, chard stems, aubergine, chopped tomatoes, dried basil, salt & ground black pepper. Garnished with fresh basil.
Garlic bread made with part baked baguette, pure spread, olive oil, home grown fresh chopped parsley, garlic, salt, ground black pepper.

This is potato pizza with tomato sauce and spinach. I just used mashed potatoes as the pizza "crust" and baked it in the oven at 450 for about 15 minutes.
Tofu dengaku with ume-braised greens, ginger and scotch bonnet "liquid death" hot sauce, seasoned rice and nori.
Breakfast: Overnight oats with Hazelnut Almond Rice milk, Raspberries, Chia seeds and chopped Pecans:
Dinner tonight - Red Lentil curry on steamed Kale, Mushroom & Onion rice:
That potato pizza sounds awesome. As does everything else obviously. Mmm, dinner time.

Firestorm, did you make the cupcakes yourself? If so, how did you get the jam in? I love the idea of jam filling non doughnut desserts.
(I don't even do desserts usually but those two look really good)
I made them from the recipe in Veganomicon (recipe also available here). The original recipe said to splodge the jam on top and it will sink in during baking, but everyone I've heard of making them says it doesn't work, so I filled the moulds 3/4 full, added jam, then topped with more batter. Worked well surprisingly.

@Firestorm: aww, snap! I didn't follow a recipe for my ones, just made them last year on a whim because I fancied doughnuts but don't have a deep-fat fryer. In the second photo, the person holding the cake squeezed too hard - they didn't start out that flat! I topped them with crunchy sugar rather than icing sugar, but icing sugar might be a better bet for next time.
I love all the posts on this thread and follow them all - I don't often post "that looks yummy" even though I keep thinking it, so as not to bore people, but I do keep taking inspiration from people's pictures here! I must follow the herd though and give a shout-out to that chocolate pie with white chocolate mousse - WOW! I was supposed to be going to SF next month for a conference and was so excited about getting to visit Millennium - but then my conference got moved to Seattle. On the bright side, I'm off to Manna (in London) for lunch today, so may come back later with some new photos!

^^Rainbow: Seattle is an excellent place for vegan fare. I have been there twice, once actually for part of my honeymoon, and it is fabulous. Just take a look at this link for ideas: http://www.vegseattle.com/VegRestaurants.pdf. If a nicer atmosphere is what you are looking for, I suggest Plum Vegan Bistro (although not quite as upscale as Millenium).
But SF is a great city as well, if you are able to make it out there at another time, I do suggest it.

Photos from Manna, as promised. It was amazing! I'm so glad we went there, it was possibly my best restaurant experience ever. And we had a wonderful sun-drenched walk in Regents Park afterwards. The perfect end to our honeymoon!

Seconded - I just need a good reason to travel to London.
Not to travel 200 miles on public transport I'll have to start looking for jobs in London (especially those close to VX). I think Booja Booja are recruiting at the moment, I wonder where they are based? That would be a dream job!!
