    woah, glory, that cake is cool! never really thought about dying the sponge until recently my sis-in-law made a blue sponge cake for my nephew to decorate for his bday! how do you get the colours not to mix together? (Am I just being dumb?!)

    tried to make cupcakes last night and they failed what recipe do you use?

    Sorry, missed the discussion about the rainbow cake. I know how to make rainbow cakes, and have a picture of one I made recently that I haven't yet had time to upload. Basically, you split the batter into six or seven portions, colour each one separately, then layer them over each other in the tin without mixing. Here's one I made in December 2010:

    Ah, the cake is SO cool! thanks for the info, I will try doing it soon! What food dyes do you use? I was looking at some in Co-op and a lot of them seem to have E numbers in....not sure if animal derived or not?

    I use Wilton gel colours. At the time I purchased them (c. 2 years ago), they were vegan to the best of my knowledge (I recall checking at the time).

    Thanks to this thread, I was obsessing about making rainbow cake all day yesterday...!

    anyway, here is my first ever attempt at making pineapple upside down cake, a staple pudding of my growing up, my Mum used to make it all the time (non-vegan version), and a childhood fave of my bf too. I wasn't that happy with it, think I needed to make the sponge thinner, and it was a bit stodgy, but it looks good! Used this recipe, minus the cherries and apple sauce and I changed the flour, used plain and gluten-free, just cos need to use up the g/f: http://www.vegansociety.com/lifestyl...down-cake.aspx

    I was hesitant to link to a non-vegan recipe, but I used this http://www.omnomicon.com/rainbowcake as inspiration for the technique of how to make a rainbow cake, although obviously I switched all the ingredients (her recipe sounds disgusting anyway and is basically a lot of rank packet mixes and diet soda - bleugh). The key thing is that she explains the right way to layer the colours so that you have a good balance. Good luck, and enjoy!

    That looks to be my fault, I selected Yo-yo's text but clicked the "quote selected text" button under Rainbow's post.

    The recipe I was talking about is from The Healthy Voyager, I've never tried it but the picture looks good (in google books its on the previous page)

    I made this a few days ago, blending avocado, banana, and pure cocoa powder with just a little water and agave added to make this awesome thick chocolate pudding/mousse. Most of it I made for my husband (but I'd be lying if I said I didnt have any myself). I am trying to help him gain some weight and also it's a way to sneak in healthy food to his diet since he has been unwell. He still doesnt know there was avocado in this. We have been running to doctors and specialists and still no definitive answers on why he has diffuse lung disease and joint pain, swelling. The anemia is under control now and we are waiting on more test results.

    All of your dishes look wonderful! I love the quiche, and the tempeh curry looks really good too. The sausage hotpot looks good except I am not a fan of cheese, vegan or not, unless it involves nutritional yeast. But I can see tweaking that dish to make it work for me. I love the idea of it. Does "hotpot" mean the same thing as hot dish or casserole? Where I am from I always heard casserole being used for these types of dishes. When I moved to Minnesota, everyone called it hot dish. So interesting the various ways to describe similar dishes.

    I use the word hotpot for any dish which has sliced potatoes on top of a mixture of vegetables with or without something like sausages or fake meat/soya chunks in a gravy or tomato sauce, and cooked in the oven. But yeh, I do find it interesting the different terms that we all have for things, depending on where you live. Hadn't heard of hot dish before.

    Glory:

    The pastry was just my usual shortcrust one.

    The filling was silken tofu blended with tinned tomatoes and a tablespoon of potato flour to thicken it (and a bit of nutritional yeast, actually, but I don't think it made a difference), then I added mixed dried herbs, salt and pepper to taste.

    I roasted the vegetables this time but if I made it again, I would've fried the onions on a low heat with a bit of sugar until caramelised and I would've cooked the broccoli in water because I like it soft rather than crispy.

    My pastry doesn't need blind baking but yours might. Then put the veggies in, pour the liquid mixture over and bake for... quite a while. Pretty simple.

    Copied Firestorm and made a pizza using a wrap as the base. Needed more fresh basil but my plant can't grow leaves back quickly enough for me.

    Pizza, bell peppers, tomatoes, TEMPEH!, some nutritional yeast, onions and garlic. It was delicious, but a lot of toppings for a small pizza.

    I've posted this before but this is a better photo! Lots of vegan recipes for lasagne contain vegetables or other things and I always wanted more of a copy of the meat version so I devised this. Lasagne made with a ragu of soya mince and tomato and a soya milk and soya cream based white sauce.

    looks yum!! I love lasagne, whenever I make it for me and my bf, we somehow manage to finish off a HUGE dish in one night (enough to feed about 5 people...oops). I use ADIP's recipe, which sounds v.similar to yours.

    Thanks . Jaffa cakes are really popular in the UK and Ireland. I've never seen commercially available vegan ones as the sponge base always has eggs in it so I decided to make them for myself. This was my first time ever trying Jaffa cakes, I have to say I'm a fan!
