I don't usually do baking so this was a bit of a novelty for me.

Thats a beautiful dish Risker! Is that pastry design your own idea?
No, that's just how you make pasties, though some say they should be crimped at the side rather than the top. I think it's even a legal requirement for 'cornish' pasties to be done that way.

They look great, have you thought of selling them at vegan fairs and stuff?
Nah. You have to pay the council to inspect your kitchen and stuff if you want to do that. West Cornwall Pasty Co do a vegan pasty.

Oh good grief Firestorm! That looks far better than I could even have imagined! WOW! A worthy feast for a veganniversary

Risker, I'll buy one off you on the black market. They look bloody good.
And WHAT? I never knew they did a vegan one at the West Cornwall Pasty Company! How exciting! My friend makes really good vegan cheese and onion ones using puff pastry.
Looks tasty!

Just made this! Very quick and easy Chikn parmesan. Whole grain rotini, sauce, vegan chikn, daiya, nutritional yeast, and fresh basil. Yum!

Vegan rosemary cornbread with homemade roasted red peppers. Served with agave butter and Mexican pinto beans.

This is the awesome vegan pizza from Mellow Mushroom. I got the mega veggie sans butter and with daiya, and had them put jerk seasoned tempeh on it.

Is that cornbread wheat free? Can I be really cheeky and ask you for the recipe for it? Just a basic idea would be fine - I can play around with spices and flavours myself. (I looove rosemary in bread, though). The pasta and pizza both look delish, too.
Yes! Many recipes I have seen use wheat, but that is not how we made it back home in Kentucky. I make it old school.
Here is the recipe I used, but here is how I changed it:
I used only stone ground corn meal, so 2 c cornmeal and no flour, and I used a few squeezes of agave rather than sugar. I am used to unsweetened cornbread, so I didn't want it too sweet. I was also out of soy milk so used almond milk instead, but I think it would be great either way!

Thank you!
Fajitas.
Chikn n dumplings.
Quiche.
I call this KFS (kentucky fried seitan). So naughty. So yummy.

What's the quiche made from? I've never actually had 'normal' quiche but that looks nice!
It was silken tofu, soy milk, nutritional yeast, corn starch, onion powder, turmeric, salt and then mixed in mushrooms, onions and spinach, rosemary and black pepper. (=

I want your quiche Ruby!
of course, the one thing the husband made.
(it was yummy)

The Kentucky Fried Seitan and the Chikn & Dumplings look pretty fantastic too, I'm just a bit of a quiche person
I personally thought the fajitas looked the most appetising! Yum!

Rosemary cornbread - thank you, EpicLibrarian! I absolutely LOVE this recipe. (Literally just made it and am eating the first two slices now!)
Tonight's supper - garlic mushroom, rosemary cornbread and sweet potato wedges:
I'm so bad at taking photos, haha.
That looks awesome! Glad you liked the recipe, it is my new cornbread go-to!

Yeah. I thought they were the same...?
I've heard they are but wanted to make sure (I read of couple of things online where people say they are different - they must be wrong) I've wanted to make cornbread for ages so now I think I will!
Thanks by the way

That style of cornbread is Southern US style. Serve it with sweet "butter" for authenticity! The South has a lot of great food. Even though it can sometimes be a challenge to veganize it, it is well worth it! This is the food I was raised with. And it is even better without the bad karma!
Anyway, here are some tasty munchies I had this week:
Panang curry and rice.
Mushroom kale quinoa with summer squash, mushroom, and tofu stir fry. This was one of the best things ever!

From what I understand, polenta is finely ground corn meal. I typically use stone ground corn meal because it has a lower glycemic index and gives it a little grittier texture.

Mmmm panang.

Oh, thanks, EpicLibrarian. (I feel like I should be calling you by an actual name...)
Louise, you can call me Sandi.

Okay Sandi, I will.
Here are the Southern Style Chickpeas and dumplings! They taste exactly like what my Grandma used to make, but without all the death and sadness.

How rude.Nothing wrong with your photos, your buttering skills however.....Yikes! Leave just a little to be desired
Panang curry is super easy to make! I make a slightly altered version because it is hard to get certain ingredients near here. The stir fry was also super easy. I love just throwing things in a pot/stir fry when I have veggies to use. What comes out is usually fantastic! I have found that cooking takes so much less time since I went vegan, although I do cook a whole lot more.

Here is the Tunisian Ragout from tonight. Served with spinach quinoa with some homemade harissa and shatta.

Thanks! On a tour of the USA so time to post on here has become few and far between at the moment! I will be posting pics of any lovely food I encounter on the way. Unfortunately so far all I've had is peanut butter and banana sandwiches and Luna bars. Not as exciting as all the wonderful stuff on this thread! Jealous of people with access to kitchens!!!!
Even the smallest person can change the course of the future
That Tunisian ragout looks fantastic! I haven't made a ragout since my omnivore days. I must try one!
Here's my little contribution for the week. Not majorly exciting but good:

The Omelette recipe I found in the Vegetarian Journal and just tweaked it to my own liking. It's a quick filling breakfast.
Mmm...love chickpea "crepes" filled with goodies! That dahl looks spectacular too! Love the color!
