    My stir fry I had for lunch made from vegan chicken style pieces, onion, garlic,ginger, green beans, broccoli, baby corn, mushrooms, coriander and spices etc.

    Oh man, I am loving this thread! So many delicious options! As a newer vegan, I have been stressing over things to bring to our families Christmas gathering this year (ideally food that would win over vegan critics) but now I have tonnes of ideas Thanks to everyone who has contributed!

    Super easy dinner we make several times a week- Broiled tofu (this one has garlic salt and rosemary) and steamed broccoli, to be eaten with BBQ sauce and Buffalo sauce... way yummier than it looks!

    Made sesame & maple tofu with herb & garlic mushrooms, spinach and sugar snap peas. We ended up putting it with mashed potato as we had potatoes that needed using, and although the tofu and the mash were both individualy excellent, they did make for a weird combination! We used some hummus and tahini dip for the tofu which was so delicious.

    It's always good to shake things up a bit! Vegans are pretty good at that!

    @Firestorm- Is the Cheezly with bacon bits nice? I've seen some of those unusual Cheezlys and have been afraid to try them! Isn't there also one with cranberries in it?

    Wow Tofu Monkey, that cake looks insanely amazing!!! Especially the icing! What's the icing in the middle made out of? Is it buttercream? It looks like the type of the cake that's messy but in a good way! You should try it with some ice-cream

    Yes the Cheezly with Bacon bits is VERY NICE - I find the normal Cheezly flavours (Cheddar, Edam, Mozzarella etc) a bit bland unless they're in something like a quiche or pizza, but the Bacon flavour Cheezly is great. Redwoods have managed to take 2 quite bland products (Cheddar Cheezly and Streaky Rashers), combine them and make a product that has all the best bits and none of the bad.
    I have tried the Cranberry Cheezly, thats nice but not as good as the Bacon flavour and I think they may have stopped making the Cranberry flavour now (its not on the Redwood website or Veggiestuff).

    Dinner a few nights ago, Sausage casserol...


    A nice quiche with a tortilla crust (keeps the sat fat down)...


    This is my "Friends" sandwich (based on the sandwich that Monica makes for Ross in friends), there is sliced Redwood Turkey style roast, a layer of roast potatoes, carrots, bread sauce, a slice of gravy dunked bread, sprouts, stuffing and cranberry sauce on an oven bottom muffin. This is from Boxing day 2009, if I can find the picture of 2010's I will post that in future.

    Sorry about the delay, I wrote this out in my lunch hour then forgot to email it home to myself and I'm not back in work until Tuesday so I had to write it again.

    Quiche (Single Serving Size)
    Ingredients:

    The “Egg” bit:

    110 Grams blended silken tofu (blend to a thick creamy consistency first, then weigh 110 grams)
    5 Grams Nutrition yeast
    5 Grams Corn flour
    Splash of liquid Aminos (if you have any)
    Good pinch Onion powder/granules (about 1/8 Tsp)
    Good pinch Garlic powder/granules (about 1/8 Tsp)
    Approx ¼ Tsp Turmeric
    Salt and Pepper

    Crust:
    Use a crust of your choice (I sometimes use a Tortilla as a quick and healthy alternative to pastry, or you can use a potato pasty).

    Filling:
    Choose whatever you want as a filling, depending on what filling you are using you will need approximately 160-180 grams of it.

    A good example which I will use for this recipe is:
    30 Grams Soya Cheddar style cheese
    30 Grams Soya Ham
    50-60 Grams diced onion
    50-60 Grams mushrooms

    Method:
    Pre-heat the oven to gas mark 4
    Dice the mushrooms and onion, place in a parcel made of kitchen foil with a few tablespoons water poured in, then seal the parcel and cook in the oven for 10-15 minutes (you can also place the mushrooms, onions and water into a bowl covered with foil and cook that way).
    This will precook the onions and mushrooms and reduces them in size, while they are cooking mix all the “Egg” ingredients together, grate the cheese and cut the ham into thin slices.
    Remove the parcel from the oven, drain the water off using a sieve and let the veg cool for a few minutes.
    Mix the veg into the “Egg” mixture followed by the cheese and ham.
    Line a dish* with your crust and then spoon the “Egg” mixture in, using the back of a spoon to spread it evenly (you might want to make it slightly more shallow in the middle as this is the bit that will cook last).
    Cook on gas mark 4 for about 1 hour or until it is golden yellow on top and cooked through – it should be firm but not too firm.
    Remove from the oven and allow to cool for about 10 minutes before eating.
    It can also be cooled completely and kept in the fridge to eat later (it sometimes tasted better cooled), but if you have used a tortilla crust it will quickly become soggy.
    *The dish I use is a rectangular dish and is 15cm X 11cm X5cm – but this is only about ¾ full when made with this recipe-you could make the filling before deciding what dish to make it with so you get a better idea of the size of dish needed.
    Next time I make this I will edit this post and add a photo of the finished (uncooked) product –this will probably be a few weeks off though.

    Here you go, again sorry about the delay.

    Sausage Casserole (Single Serving Size)

    Ingredients:
    50 Grams Carrots sliced thinly
    50 Grams Onion sliced thinly
    50 Grams Mushrooms sliced thinly
    2 Vegan Sausages (In the picture I used 1 Fry’s and 1 Wicken Fen, but Linda McCartney work well) defrosted (if necessary) and either chopped into bite size pieces or left whole.
    Approximately 10 Grams gravy powder (I use plain Bisto)
    Approximately ¼ tsp English mustard (or any mustard you want).
    Salt and pepper to taste

    Method:

    Add the vegetables and a pinch of salt & pepper to a medium saucepan with 1-1 ½ inches of water and boil until the vegetables have cooked and there is about ½ an inch of water left.
    Mix the gravy powder with about 100ml hot water to make a thick gravy and stir in the mustard.
    Add the gravy to the pan and stir well (this will increase the liquid content and make it quite thin – that is fine it will thicken).
    Add the sausages to the pan and stir well.
    Continue cooking for 5-15 minutes (until the sausages are cooked and the gravy has reduced to a consistency that you are happy with – I like mine slightly thinner so that any spare can be poured over the veg).
    Taste to check that it is nice and tasty then serve, or chill and eat cold the next day.

    Rainbow (and anyone else out there), you can ask for any recipe you want, it also gives me a good excuse to write them down so I dont forget them.

    Tomato, Mushroom, Green bean and Chorizo Risotto

    Ingredients
    65 Grams Arborio Risotto rice
    Either 1 400 gram tin chopped Tomatoes and 400ml hot water/veg stock OR 2 tins chopped tomatoes (the second tin will need to be warmed up) - I used the first option as I only had 1 tin of toms in the house.
    100 Grams Mushrooms, sliced
    25 Grams Onion, diced
    25 Grams Green Beans , cooked and cut into 1 cm Pieces
    1 Vegan Chorizo – I used Wheaty Space bar, but you could use Viana Chorizo (or Redwood if you’re desperate)
    Salt, Pepper and Mixed Herbs

    Gently fry the onions and mushrooms in a little oil for 10 minutes until they are nice and soft.
    Add in the rice followed by 3/4 tin of tomatoes (reserve the last quarter for the very end), salt, pepper and a good pinch of mixed herbs.
    Stir constantly. When most of the liquid has been absorbed, keep adding more liquid (either the 2nd tin of warm toms or the hot water/stock) as it is needed and continue stirring and adding liquid for the next 20-25 minutes.
    When the rice is soft and tender add a little more liquid, the Green Beans, Chorizo, a little more seasoning and the reserved ¼ tin of Tomatoes (this will ensure that if you have been using water/stock the Risotto will still taste like Tomato when finished) and continue cooking/stirring for a few minutes until the Green Beans and Chorizo have warmed through and the Risotto has reached a nice consistency.
    Done!

    The pizza we made tonight. Crispy 'Italian style' base, tomato passata, mozzarella style Cheezly, mushrooms cooked in garlic 'butter' (Pure Soya) and slices of Redwood ham and bacon. OM NOM! Better than the stuff omnis buy in the shops and much cheaper too!

    Simnel Cake - minus the marzipan "top" covering as I didn't have any and was too lazy to buy any, so I used yellow icing and 11 almonds. I made it for Mothering Sunday. This was great, I wasn't sure what to expect as I've never eaten Simnel Cake but it tasted *really* really nice!!

    Gluten free!

    This will certainly be a new tradition for Mothering Sunday weekend.

    Traditionally it is a light fruit cake...with almond paste sandwiched into the middle of it...then covered in marzipan. I hate anything related to marzipan/almond paste, but the marzipan in the middle made the cake I think! Maybe I'm converted. haha So glad I decided to make it, I nearly didn't.

    The second pizza was a little less brown =) the mushrooms were just fried lightly in vegan 'butter' and garlic, and then extra garlic butter was added before the pizza went in the oven.

    The tofu was easy but kind of slap-dash. I tend to just throw ingredients at things and see what happens. I think I marinated the tofu chunks in a seasame oil and maple syrup mix and then fried them until they browned up, with some green veg and more maple syrup, seasame seeds and herbs. I don't have a proper recipe although I wish I'd written it down now!
