Grilled veggies and salad. Everything I cooked tonight I have growing in my garden (except the mushrooms). Not everything is from my garden though since most of the plants are still young but the lettuce is fresh from my garden.
Dinner yesterday - Fried Rice, Soy Chikin, Tempeh and Veg Kebabs, Vanilla Dessert with Strawberries.
Dinner Tonight - Blue Cheezly Quiche with a Good Friday Theme:
Watercress, spinach, cucumber and apple salad with a vinaigrette dressing, whole wheat pasta with pesto, potato salad, hummus, steamed asparagus spears with melted pure spread.
Risker, that looks soooo good and much healthier that the stuff I eat.
This is what I had for dinner tonight-
"Chick magnet chicken casserole" adapted from Peta's Vegan College Cook Book (this is my favourite dish, the recipe says use nachos (I use M&S Jalepino ones) but in this version I have used Spar bacon rasher crisps instead)
Sometimes I use Ritz Crackers (I then rename it "Haven" casserole because I was watching the tv series Haven when I thought up using Ritz Crackers, and also because Haven was based on a Stephen King book and in his other book The Stand one of the foods they mention are Ritz Crackers (I have a very strange mind - it jumps around like a butterfly so please excuse my rambling)).
This dish looks terrible but tasted devine:
For dessert I had a hot cross bun baked in custard and chocolate (again this looks bad but tastes sooooo gooood):

The first dessert is Provamel choc dessert and Provamel custard with jam with strawberrys under, the second dessert is crushed spiced german biscuits, sliced strawberrys, custard, sliced tangerine, chocolate dessert, more strawberrys, more custard and more strawberrys. I'm trying to increase my weight until I'm as wide as I am tall.
I made this tonight for my boyfriend. He was craving "neon-orange boxed mac n cheese"
This is the most unhealthy, non-dessert meal I have ever made, and although I refused to eat more than a few spoonfuls I am still quite proud of how it turned out.

Sorry it took so long to respond, my phone has not been getting my emails for some reason.
I get inspiration from some cookbooks, vegan websites, make some up and sometimes I get inspiration from non-vegan recipes which I veganize.
I generally never follow a recipe to the word, just use it as a guide.
The pasta was roughly 80Grams Soy Yogurt mixed with a couple small dollops of Dijon mustard and a pinch of bouillon powder. 50 Grams pasta, 25 Grams shredded carrot, 25 Grams peas, 25 Grams diced onion, 25 Grams Soy Chikin and 25 of Soy Cheese.
Chips, onion rings, curly fries, ketchup, bun with two vegetarians choice burgers, gherkin, tomato,
grated medium cheddar sheese and ketchup. Spinach for garnish (not for eating).

wholewheat rice noodles with stir fry veg and parika n garlic tofu

Spinach with home grown beansprouts and dressing. Pasta in a tomato, onion, cannelini bean and red & yellow bell pepper sauce, garnished with fresh basil leaves. Garlic bread (kinda home made).
Behold the first vegan (non-gluten free!) cake I have ever made...it was for a birthday.

I made a mistake with food colouring the other day, I made a vegan "egg" , I used some natural red food colouring mixed with yellow to make orange. It looked OK but tasted weird, thats when I realised it wasn't food colouring, it was strawberry flavouring.
My attempt at making börek. They are filled with spinach, tofu, mushrooms, walnuts and lots of spices.
A garlic loaf I made.

Haha, oh gosh! Sorry but...lol I'd make the same mistake also I bet, as they are both red aren't they?! These Natural Food colourings seem to mix into the yellow of the cake sponge which is why they aren't so strong...but the red is paprika and that always stains even in curry and so on. lol It still mixed with the yellow and made some brown bits...I think I'll stick with either vanilla or chocolate cake from now on...haah

Well, I did want to try a gluten free version of this sponge...as I think the yoghurt in the recipe with combat the dryness many gluten free cakes have. It would be nice to have a basic gluten free sponge recipe that can be adapted!

I can't look at this thread because I can't cook yet and I am jealous!!!!!!!!!!!!!!! Lovely food btw..I am glad I bought some vegan cookbooks..time to get busy in the kitchen. I don't know how to upload pictures from my phone to here but I just ate at the vegan restaurant near my home (yum!!) and the chef made my rice into a heart shape. It was so cute!!

The way to get your pictures to show up is to upload the pictures to a photo-hosting site such as Photobucket or Flikr, get the imbedding URL, go to the little 'insert image' button on the top of the reply box, put in the URL, making sure that it only has one http:// and it should show up then.
I know because it took me ages to get it to work too! Looking forward to seeing your pictures!

Chopped spinach mixed with diced tomatoes & cucumber and three bean varieties topped with grated carrot and jerusalem artichoke, orange chunks, diced avocado, chilli fried smoked tofu and basil leaves. Drizzled with a home made vinaigrette around the outside.
That does look great mauitn, what's the brown stuff on the sides?
Those are pulp crackers I made after a carrot, celery, pear juice. Okay, but a lot of work/time in the dehydrator for not much taste.
