I got this book about a week ago, I am in love with it. She has a wonderful way of keeping things simple, from scratch and super super healthy. I made the lasagna roll ups DELICIOUS One of the dips, AMAZING and the pumpkin cheese cake (with a fresh farmers market baking pumpkin that i bought) ~~~ out of this world my favorite that i have made so far.
I just got it in the mail a few days ago and have yet to even read through!I heard there's a black bean brownie recipe in it that I'll definitely want to try! (I've made one with black beans before and it was quite tasty, but back then it wasn't vegan yet.)
How did you like the banana bread?

It was really good, but could have done with more spices. Most of the recipes are really low fat (banana bread is fat free), next time I might try adding cocoa powder. There is also a recipe to make 1 individual brownie, which I will try soon.
Oh wow, fat free banana bread, never tried that! I'll keep in mind to possibly add more spices.
The individual brownie sounds interesting too! Perfect for someone like me who can't ever seem to stop at only 1 tiny piece! LOL

I sliced and froze half the banana bread, I defrosted a slice yesterday and have to admit it was even nicer than it was fresh!
