There is a recipe in Hearty Vegan meals for monster appetites for bacon ones using Baco's (I have McCormicks). I am making them tomorrow night to take into work the next day because I am on a night shift, I am having them with chili. Will definitely take photo's!

I'm gonna have them with chili this time cos the chilli is already made in the freezer (along with Cholent for tomorrow - spent half of yesterday cooking), but will certainly try them with gravy next time!
Screw it. I'm gonna have a crack at biscuits and gravy too. It sounds carbtacular, which I'm very much in favour of.

there is a good recipe on vegweb.com that I use. you just need to make sure your gravy is "liquidy" enough. otherwise it can come out glelatinous like....

I've had a small nibble and it was nice but I made it to take with me to work tomorrow. I might also have some cream 'cheese' with it. The book is great-I also love the other one they wrote-The best veggie burgers on the planet. I would recommend both!

Yummm! I am definitely going to try that...hopefully I don't ruin the taste by excluding the cream cheese. I've never been a fan of anything resembling creme. :/ Maybe adding some jalapeno juice? Or cheddar FYH?
I was wondering if you would happen to have a recipe for non-fat home made tortilla chips that I could whip up and bake in my convection oven? I recently tried a taco salad at our local vegan restaurant and I want to recreate it...but I might need to order the tortilla bowl maker thing on Amazon. I'm afraid that if I put a ceramic bowl it'll break or worse.

Just returned from a 3-week holiday in Taiwan and stepped on the scales to realize that I have gained 8 lb in those 3 weeks. Just the availability of said vegan comfort food (deep-fried vegan chinese stuff, soya lattes and crisps at any time of the day, etc.) obviously did a great job ... so back to fruits and salads it is for me.

My favourite comfort food right now is simple one: home made guacamole with tortilla chips.
For dinner I will have the same guacamole with kidney beans, rice & corn. It is simply divine and so easy to make!
Gosh there is a veganish cafe near to where we live and they do glorious chocolate cake and an even more glorious chocolate cheesecake. Those are heavenly, but I think my comfort food is a nice pasta with vegan mince and a nice sauce. I can make a decent "cheese" sauce now with nutritional yeast and it is divine. A good eggplant, tempeh, onion, hummus and tomato toasted sammich also goes a long way to soothe the frazzled nerves!

Yummm! My tummy is rumblin'! That sounds quite nice...especially about now! it must be freezing cold in NZ! The temperature started dropping last night as a cold front swept over most of the nation. In preparation for the chilly weather I am making a decadent pumpkin pieIt's "sugar-free" and low carb, but it's delish. Yeah they take a little while to make, but once you get frying eggplant to an art they are so wonderful. Its not too bad, actually, its 54 degrees F here now, but it is crazy windy during the day. MM I havent made a pumpkin pie yet, but I bet its tasty.

It's 41 degress F here right now, but our high for the day is in the low 60's so not much of a difference. Do you usually coat the eggplant with some sort of flour, starch or something else? I've tried frying mine with canola oil cooking spray (olive oil burns at frying tempt) and the eggplant always soaks it all up. I usually bake mine then throw it on a non-stick skillet and crisp it up a bit.
Mhmmm I am not sure if it's a popular dessert there, but it is definitely in season here in the states. Pumpkin pie screams AUTUMN! It's really very simple: 12 oz Firm Silken Tofu Lite (1 pkg), 15 oz organic pumpkin puree (1 can), 2/3 sugar/sweetener (I use stevia), cinnamon, nutmeg, pumpkin pie spice and a little ww flour to garnish the top so it crisps. Pecans or almonds are a good addition, but I use ground flaxseed because it's finer...plus gotta get those Omega-3's!

No, I put some oil in the pan, then slice the eggplant quite thin, maybe 1 cm at most. The I flip it into the pan, let it soak for a second then flip it again. After that I coat both sides with paprika and let it fry into it a little. After that I add some spices depending how I am feeling. Usually a garlic, chilli and salt blend or just some cumin. Then just get it all nice and crispy. You got to be gentle with it as it can break apart easily, but its worth it.

Yummmmm that sounds very tasty. I still have one eggplant left over! Sounds like I will try that out today. I only have panini type bread so I'll try it as a panini for now. Oohh a grilled panini with tomato, hummus, eggplant, onion and tempeh sounds goooodd...maybe a few slices of portobello and spinach too.![]()

I tend to make a ginormous bowl of chocolate oatmeal with whipped banana, banana slices on top with loads of mixed nuts and peanutbutter on top... Probably not the best thing, as it is probably enough food to feed a family of four, but it is sooo yummy![]()

Discovered a 'new' comfort food for me recently. Toast spread with pesto and mozzarella slices covered in baked beans. Oh yes.

It was an 'at work' accident. Don't like the marg they use at work, so grabbed some pesto. There were some Cheezly Moz slices kicking around, so went along with the cheese on toast, cheese sandwich idea, and then plopped a load of hot baked beans on top that were bubbling away on the stove! It's a winner.
