    Default recipes for vegan christmas pudding that will satisfy non-vegans?

    hi,

    i run a market stall and was hoping to do some xmas puddings for the xmas markets....I do all my stuff vegan, but dont advertise as such unless someone asks, as i need to pull in customers from the non-vegan sector too, or i couldnt keep the thing running Any recipes for a traditional xmas pudding that would satisfy non-vegans who are used to the egg-rich ones and a recipe they wont find disappointing? Im grew up in the states so have no experience with these prior, but now living in ireland....


    similarly, any ideas on adapting this fruit cake recipe to be vegan? best egg replacer? this is a family recipe long in use but has never been veganized....i hate to do too much "experimenting" with the possibility of failure because the ingredients are expensive and the cooking times long and use alot of electricity...suggestions?

    "Old Time Fruit Cake"


    1 cup veg. oil
    1 1/3 cups of sugar
    1/4 cup molasses
    4 eggs (applesauce?)
    2 cups sifted flour
    1 tsp baking powder
    2 tsp salt
    2 tsp. cinnamon
    1 tsp. nutmeg
    1 cup orange juice
    1 cup sifted flour
    2 2/3 cups of raisins
    2 cups cut up dates (1 lb)

    2 cups mixed candied fruit (1 lb)
    1 cup walnuts (broken in half)


    Heat oven to 275 degrees
    Line tins or loaf pans with brown paper or (we use coffee filters)
    Mix oil, sugar, (eggs) and molasses.
    Beat vigorously with spook or electric mixer for 2 minutes
    Separately sift together dry ingredients.
    Stir into oil mixture alternating with orange juice.
    Mix the additional cup of flour into fruit and nuts.
    Four batter over fruit and mix thoroughly.
    Pour into lined pans.
    Place a pan of water in the oven on lower rack.
    Bake cakes 2 1/2 to 3 hours.
    After baking let cook for 15 minutes before removing from the pans.
    Cool totally before wrapping tightly. Store in a cool place
