I work 12 hour shifts, nights and days so theres little time to make my lunches each day and going to the supermarket all the time can be a little boring and predictable.
So I've starting making large 'pots' of rice based lunches i can dish out for each day and this one is really yummy and i just wanted to share.
Its really little more than a 'what have i got in the cupboard/fridge to chuck in the pot' type recipe
Boil up some brown rice
Fry up an onion, 2 cloves of garlic and 1 bird eye chilli. Add parsley, thyme, salt and pepper. (in what ever quantities suits you)
Throw in a tin of green lentils, tinned toms, pre soaked soy chunks, 1 tbsp of Ketchup, 1 tbsp of sweet chilli sauce
add the brown rice when ready
If i'd have had some i would have thrown some mushrooms and sweetcorn too.
Its quite yummy and really nice cold so perfect for lunches on the go (or whenever you need a bite to eat!)
