I was at the animal sanctuary volunteering at their annual Spring Festival, so there wasn't a lot of food going on today! Luckily, there is always one booth where vegans are talking about their food choices, and so I was able to get some food!

lunch: collard leaf wrap with basmatti rice, red pepper, shredded jicama, squirt of braggs;
coconut milk yogurt; garden salad w/ chiles, broccoli sprouts, yellow squash, romaine lettuce, spinach, tomato, maple mustard dressing; green tea
Dinner: black bean, corn, and potato enchiladas w/ nutritional yeast added and a vegan enchilada sauce. Glass almond milk
Breakfast: Tasty flakes with strawberries and peanut butter
Lunch: Salad with roasted kabocha squash, houmous and crackers and some roasted chickpeas
Snack: Apple and an apple and cinnamon mini muffin
Dinner: Noodles with mushrooms and tofu, with a few glasses of red wine
Snack: Slice of carrot cake and some strawberry pencils
Breakfast: Steel cut oats with banana, cinnamon, walnuts, and flax
Lunch: Mixed baby greens with "Caesar" dressing (I love my mini blender! It is great for whipping up easy dressings)
Black beans with Gullah-spiced quinoa
Dinner: We are having a birthday party for a friend, so I made Black beans and quinoa with asparagus and brocolli, and I know there will be some white bean hummus, edamame hummus, and more of those yummy vegan truffles and sheetcake!

Breakfast: Toast, clif bar (choc chip peanut butter), apple
Lunch: Chickpea Salad (Chickpeas, tomatoes, lettuce, pepper, onion, cucumber, carrot), Tempeh bacon tomato rice with kale. Pear, cherry soy yogurt
Dinner: Porridge with soya milk, banana & grated gianduiotti
Snacks: Apple, plum, BBQ Llamas
Drinks: Water, coffee, lemon tea
Breakfast: Kashi cinnamon harvest with soymilk, strawberries, coffee.
Lunch: Confetti salad (nuts, beans, corn, peas) with spinach, tomatoes, and liquid gold dressing.
Snack: mandarin orange
Dinner: Roasted carrots, squash, and tofu. Brown rice. Herbal tea.
Aaah if you could help me to get this jar open I'd appreciate!! This thing just refuses to open yesterday and today...
OH laughed yesterday night told me to put it in hot water but it still doesn't work, grmpfh!

First, I have to say that we vegans eat some AWESOME stuff! I eat so much better now than I ever have! Second, this thread gives me so many great ideas for meals I want to try!
Breakfast: Steel cut oats with apple, cinnamon, flax and a cup of rice milk
Snack: cashews and sunflower seeds
Lunch: Gullah spiced quinoa with black beans, a salad, and an orange
Dinner: Stir fry with seitan, water chestnuts, brocolli, carrots, and peppers over rice with an orange teriyaku sauce.
