    Hehe, blueberry gravy muffins

    had to go to training, no time for breakfast as an early start (for me 8.45 IS and early start, especially as it was 5 whole minutes further away than work!) so...

    elevensies: mustard-herb-soy crackers. Mixed berry cobbler with almond milk.

    Lunch: slice of spicy split-pea loaf, spring greens, potato wedges.

    Snack: apple.

    Dinner: Leftovers from lunch covered in cashew-balsamic vinaigrette with toast on the side, and a raspberry-almond-milkshake.

    hot porridge with rice milk, flax seeds, plus blueberrys, raisins, raspberrys, spinach, soya yoghurt

    4 bananas

    wheatmeal loaf with hummus + romaine lettuce, spinach, pak choi, bell pepper, cucumber, walnuts, pistachios, peacans

    banana & 3 dates

    apple & pomegranite

    baked potatos & cabbage, 2 carrots + hummus.

    2litres plus of water though out day

    I find eating over 300 grams steamed veg (broccoli, kale, cabbage, carrots, peas etc) at night meal helps a lot.

    Ooh, sorry for the delay in replying. I am afraid I don't have a recipe, it was basically a load of fried veggies (onions, mushrooms, carrots etc.) with smoked paprika, garlic, chipotle paste (from Waitrose, the only place I've managed to find chipotle, but you could just up the smoked paprika and add chilli powder otherwise), cooked split peas, tomato puree and some cooked millet for bulk and texture. Quinoa or breadcrumbs would work too. Baked in a pyrex baking tray rather than a loaf tin so it wasn't too squishy.

    I've had good results with the vegan lunchbox loaf studio before, that has an option for using split peas.

    Its okay, I ended up using the Magic loaf studio, with the split peas and quinoa option, but millet sounds good and chipotle paste too!

    I'm on nights this week so my meals are backwards

    Breakfast: Sweetchilli veggie cheeseless pizza with extra jalapinos! Yummy!!!
    Lunch: Left over chilli concarne

    3 cups of tea and 3 glasses of water
    I might have some toast when i get in just before bed, or i might just collapse depending on how tired i am after walking the dogs lol

    B: plain oatbran w/ molasses, juice in high speed blender (1 cup spinach, 1 cup rhubarb, orange, water)

    morning snack: mashed sweet potato w/ cinammon (nothing else added as I love the taste of warm sweet potato as is)

    L: cup quinoa and raw kale, carrot, cranberry mixed together with spices; collard leaf wrap with blended carrot and jicama in it. Ginseng tea

    D: my own homemade soup (white beans, fresh green beans, tomato, yellow squash, onion, vegetable broth, water, oregano); sprouted english muffin w/ chickpea spread; savoy cabbage, collards, sauerkraut sauteed in apple cider vinegar with caraway seeds. Glass of almond milk.

    breakfast: homemade coconut milk and then blended with organic strawberries, spinach, and orange (shared with husband who didnt even know I snuck the spinach in there; sometimes he's clueless); oatmeal with cinammon

    lunch: chopped mango and raw collards mixed in warm basmatti rice with garlic. Last of my chickpea spread on last sprouted english muffin. Ate way too much chickpea spread.

    dinner: homemade flatbread using chickpea flour and spelt flour, with refried black beans spread on top and onion, olives, tomato, romaine lettuce sprinkled on top for my own version of "taco pizza". Glass of almond milk

    This morning I woke up with bad cramps and diarrhea and headache. The soles of my hands and feet hurt and finger joints are swollen. Every once in a very great while this happens to me (it goes away within 24 hours) and I wonder if I am not allergic to something I am eating. It's driving me crazy! it has happened two other times now and started last November or so.
