While I see there have been plenty of Carrot Cake posts I just want to tell you about my adventure into making a carrot cake for Christmas dinner. I have only been a vegan for about 6 months and half of the family still hasn't switched. I had this wonder carrot cake recipe that called for 1 1/2 cups of oil and 5 eggs. OMG.
I decided to give it a try and I switched the oil to a half cup of oil and about 3/4 cup of apple sauce. (I didn't relize at the time that I used chunky apple sauce) For the eggs, I used 2 Tablespoons of flax meal and 6 Tbsp of water, and 3 T of Egg-replacer.
Now I used vegan cream cheese for the frosting but it was plenty sweet without it so I think next time I will just dust it with powered sugar.
