Toasted avocado & houmous sandwich
Bberz, do you with toasted avocado & houmous sandwich mean that you have a toast with houmous and avocado on it or that you toast the avocado in some way? If you've found some miraculous way to cook avocado, please enlighten me, I love it so much. My favorite fruit.
Yesterday I made potato mash with lingonberries, fried onions and my mom (who I'm visiting) was supposed to buy some soy steaks (beefs, I don't know the proper english word), but they weren't vegan so I skipped them.
After that I made us some apple pie with vanilla sauce, and this morning I had a couple of delicious toasts with avocado and the remainings of the apple pie. Sweets for breakfast, I LOVE IT!

Hi Leaf, I just made a sandwich with mashed avocado & houmous and then put it under the grill it toast on both sides. It was lovely!

I ate with some friends yesterday, so I made another batch of apple pie (double crust or whatever you call it), chocolate balls (wow, that does not sound right when I directly translate it haha...), vegetables in the oven with some time and oil with marinated soy steaks and a soyghurt sauce with mango chutney. God I love when people love vegan food. The best thing is when instead of "This isn't so bad..." they go "Dear mother of God this is delicious!"
Today my mother whom I'm visiting is teaching me to cook a persian dish I've been longing to learn. Other than that I will try to not make more apple pie. I have issues haha! I'm bad at not eating desserts when I'm on vacation
Breakfast: Smoothie- bananas, strawberries, blueberries, mango, and a little almond milk.
Lunch: Green Beans & Kale- green beans, kale, onion, mushrooms, red pepper flakes, garlic, touch of salt and pepper (all cooked together until green beans get soft)
Snacks: 2 tangerines, a bag of celery, and some vegan peanut butter for dipping
Dinner: (Haven't had it yet, but I know this is what it'll be) Lettuce wraps- red onion, celery, mushrooms, cashews, yellow bell pepper, parsnip, garlic, crumbled tofu, water chestnuts, and plum sauce; cook it all together, serve in leaves of lettuce.

The first was amazing so I thought it must've been a fluke so I ate another, just to be sure! ..purely on a food science level.... you can see where this is going!! 2 for lunch.. 2 for dinner! Granted I made small ones but still! So I couldn't eat anything else all day!! Lesson learned but not really in a hard way! : ) I regret nothing!!!! NOTHING!! *rubs belly*

Today was lazy as I'm not well.
Pittas with leftover tomato soup that had thickened so was more like a sauce, handful of almonds-hebal tea.
Lunch/dinner at 3pm-two wraps, one with leftover bean chilli, spinach and seasoning, one with salad and the sauce/soup lol. Hot chocolate made with soy milk.
Snack-wrap made with leftover bean chili (again!) and spinach and hummus. Almonds, herbal tea and a strong vodka to help me sleep off this damn ailment!
The greatest mistake is to do nothing because you can only do a little.

Oh I missed your question! Oops, sorry. It is soya with mushrooms and veggies in it. And it is quite yummy.

Thank you b-c-s, it was really good! I just mixed together a marinade of soya sauce, veg stock, sriracha, ginger and oregano, poured it over slices of plain tofu and baked in the oven until crispy. It was quite ad-hoc but turned out quite nicely

Munched on some more pineapple as I cut some up to put in the fridge

I had a big green smoothie, but was bummed when one of the apples I used had a really bitter skin on it, so it made the whole thing bitter. I forced myself to drink it.
For lunch I had some tomato slices with spicy mustard on vegan whole wheat bread.
A small packet of St. Claire's lemon tart candies. I had a real sweet tooth today.
Dinner was chili with avocado, corn chips and nooch.
