Tomato and cucumber sandwich (homemade seedy wholemeal bread) with a mountain of spinach.
Steamed potatoes, broccoli, cauliflower and mushrooms chucked in a bowl and covered with a tomato, onion and red pepper sauce. (with a billion spices of course )
Snacks: Strawberries, cherries, watermelon and strawberry smoothie.

Breakfast: Homemade juice - chucked in an apple, half a massive papaya, a clementine, some carrots and some ginger. Then had some muesli (don't normally like it, but LIDL does an amazing mix(!)) and almond milk.
Lunch: Two pumpkin seed ryvitas topped with low fat hummous, cucumber, cherry tomatoes, red onion and pitted olive slices
A pear
A chocolate bourbon biscuit
Dinner: Mixed vegetable and cashew singapore rice noodle bowl, at my local noodle bar. Tiger beer.
An ice lolly - we went bowling and the air con was broken!
Cinnamon wheat cereal with flax, walnuts, and almond milk.

I actually have no idea what kid of squash most of them were! There was a large one that was eggplant shaped and pale green, a long ridgy dark green one, summer squash, another large roundish dark green one, zucchini squash, a pale green one and a yellow one shaped like a flying saucer. They all taste very good though! Once I chopped them all up, they filled up a very large pot.

i'm actually quite proud today (brand new vegan, but i actually was able to get a few supplies to finally eat right!) breakfast: a smoothie with a mixture of: banana, pineapple, golden delicious apple, cherries, apple juice, and soy milk lunch: a stir fry with a mixture of: sweet peppers, black seasoned beans, squash, spinach, carrots, celery, sweet onions, tofu, pineapple, rice, and soy sauce

Breakfast - Besan Chilla with peas and green pepper (chickpea flour 'omelette') and fried sweet potato slices
Lunch: Fruit and flax seed shake, 2 pumpkin seed and oat ryvitas with low fat hummous and an orange.
Dinner: Leftover rice noodles with Singapore style stir fry: peas, sugar snap peas, cashews, pepper, shitake mushrooms, babycorn, water chesnuts. Garlic roasted mushrooms with chilli flakes, Linda McCartney sausage.
Strawberries.
Red wine.
I'd echo Epic Librarians pinterest recommendation. I've been following Alicia Silverstone, the lady who writes Oh She Glows and a couple of others with vegan food boards and it's given me so many ideas!!
I started out on pinterest with just a vegan board, but it has since evolved into various boards, including one for meals, one for snacks, one for desserts, etc. Sometimes I get easily flustered because I cannot think of what to cook/eat, so now I just go to Pinterest and look over my boards, and it is so easy to find something good!

Breakfast: Smoothie with flaxseed, peaches, mango and strawberries.
Lunch: Guacamole in a seeded wrap, some slices of cantaloupe melon, slices of an orange, handful of cashews and almonds.
Banana and some water on our bike ride.

Dinner: I'm making Fat Free Vegan Kitchen's beetballs with wholewheat spaghetti and salad.
And hopefully having a glass of wine seeing as I'll probably open a bottle for the spaghetti sauce
Have managed to stay away from the biscuits today. My wife is so slim and muscular and I don't want to look like a slob on comparison when we go away next month.

Hey! I'm new to the forums here. I also just recently started being vegan (again - I used to be vegan a few years ago).

Stir fry with seitan (my first ever attempt at cooking seitan!)

I'll probably have a late night snack too. Most likely another banana.

I'm still undecided about the smoky scheese, its definitely edible but its unusual flavour is confusing me! I read the scheese thread and saw that alot of people say the smoky one is their favourite scheese, I might have to try the plainer ones to see what I think!

Dinner: Bowl (Noochy kale, fried mushrooms , chickpeas, tofu bacon, lentils, veg). Plain soya yoghurt & black cherry jam
Drinks: Water, coffee, wine, beer, pepsi, coke, hazelnut latte
