Used roasted eggplant instead of noodles
Cheese sauce: cannelloni beans, coconut milk and veggie bouillon mixed in the blender and simmered until thick (got this off of Reddit, and it is AMAZING--thickens and hardens like real cheese!)
Topped with nutritional yeast and a little daiya

Yesterday: Breakfast - Peach, mango and orange smoothie
Lunch - Cashew and veg stir fry over noodles
Dinner - Had an omni friend over and served...
Starter: Baba ghanoush, hummous with chilli, hot pittas, marinated olives and nuts
Main: Tagliatelle tossed in broad beans fried in truffle oil with chilli and garlic, topped with a homemade tomato sauce, topped with baked breaded herbed aubergine slices, topped with 'cheese' sauce and scattered with torn basil. Steamed broccoli on the side.
Dessert: Chocomole pudding - ripe avocados blended until smooth with cocoa powder and agave syrup, served with cherries.

Yesterday: Breakfast: Oatmeal prepared with water and maple syrup, coffee (black)
Lunch: Peanut butter and jam sandwich
Dinner: Brown rice with kale sauteed in olive oil, garlic, salt & pepper
Late night (at the pub): French fries & ketchup, 10 oz. of locally brewed Imperial Stout
Throughout the day: 96 oz of water
Today:
Breakfast: Oatmeal prepared with water and maple syrup, coffee (black)
Lunch: Eggplant sauteed in olive oil with garlic, salt, pepper on whole wheat sandwich with heirloom tomato
Dinner: Croweder peas (boiled with splash of olive oil, dash of salt & pepper) with okra & tomato
Throughout the day: 96 oz. of water
