Beans (or other foods) as taco filling?

(i apologize b/c i know this has probably been said a million times before) but i was wondering what you favorite "taco meat" was. I once have 2 recipes that were so good but i lost them. Anyway, i was wondering what you favorites for? Its such a summer food too(since its JUNE)
