    Default Wedding Cake Disaster :-(

    I am going bonkers and am very tempted to get some eggs :-(

    I am trying to make a 3-tier wedding cake. I won;t be eating it, I'm just making it...I have tried all the vegan recipes I could possibly find. But they all failed.
    I then found a really good one but I only mad cupcakes. When I used the recipe for the cake, the cake sank. I am using Baking Powder and Vinegar as egg replacement.
    So I am not using any extra baking powder. It worked great for cupcakes!

    The sunken bit doesn't worry me too much but it seems the cake is too unstable to be decorated! Has anyone got a fool-proof recipe for a chocolate cake??? All the recipes
    on the internet don't seem to work the way I want it. And my oven works fine by the way...sigh!

    It's always the way you make a cake a hundred times for yourself as soon as you're making it for someone else it doesn't work. This is the one I always fall back on it's never gone wrong.

    Chocolate Banana Cake

    1 1/4 Cups S.R Flour
    3 tsp Baking Powder
    1/4 Cup of Cocoa
    8 Tbsp Oil
    1 Cup Sugar
    1 1/4 Cups of water or 1/2 Cup of soya milk and 3/4 water
    1 medium banana mashed

    I basically mix the dry ingredients. Then add the wet ingredients to it and whisk it with a hand whisk.
    Then cook in 2 - 8" pans For 30 - 40 minutes 375 degrees Gas 5

    I reduce the sugar to more like half a cup for my taste and also reduce the oil.

    It always works and I've given it to other people and they've all made it with no problem.

    I've found when I've made cakes at my mother and mother in laws houses their baking powder is always out of date and doesn't work with vegan cakes. As they both make cakes themselves it's obviously not that important when you are using eggs. So it might be something worth checking. Good luck.
