    Default Lemon Explosion Cake

    This is my favourite recipe from The Cake Scoffer by Ronny

    Lemon Explosion cake

    4oz vegan marge
    6oz self raising flour
    1 tsp baking powder
    6oz caster sugar
    egg replacer powder to the equivalent of two eggs
    (or 2 floz of vegetable oil and slightly more baking powder)
    4tbsp soya milk
    1 grated lemon rind

    Juice of one lemon
    4oz icing sugar

    1.) Sift together the flour, baking powder, lemon rind and sugar
    2.) Melt the marge gently in a pan or microwave. Add it to the dry ingredients, along with the egg replacer and soya milk and mix together.
    3.) Spoon mixture into a greased bread tin or small cake tin and bake at gas mark 4 (175 C) for 40 minutes.
    4.) Add the lemon juice to the icing sugar to make lemon icing. Then, as soon as you have removed the cake from the oven, pour it onto the cake and quickly spread it out. The icing should seep into the cake.

    Sounds delicious, I love lemon. What is self-raising flour though? What's castor sugar?

    Self-raising flour is flour with an added raising agent and caster sugar is sugar that's finer than granulated, but not as fine as icing sugar (powdered or confectioner's sugar in the USA?).

    Could I make my own self raising flour by adding sodium bicarbonate to regular flour? I thought powdered sugar was icing sugar.

    Could you just convert the whole damn thing to American ? I only speak a little English .

    I think *M* meant that icing sugar is known as powdered/confectioner's sugar in the USA

    Caster sugar goes as 'Superfine Sugar' in USA I think, Feline

    I made this at the weekend as my manager bought me the book as part of my Xmas present.

    I have to say not only was it really simple to make but it was delicious! My Mum, Dad and 88 year old Grandad all had some and enjoyed it too
