    Default Tofu recipes ala Chrisanne

    When I decided not to eat meat anymore, my mom started making meatless patties when I came to visit.
    They were extremly good but they contained egg. So, siince I try to live as vegan as possible I re-did her recipe a little and turned it into vegan patties. They're quite good
    I was afraid they're going to be too dry but they're actually very juicy.

    If somebody is interested in the recipe I'll be happy to write it down for you!

    Yes please, I like the look of these. I'm the only vegan in my house so I make a lot do stuff ahead of time and freeze portions, I could make a batch and freeze them. I have never found a tofu recipe I like yet, so it will be interesting to try these.

    Ok. here's the recipe.
    It makes around 25 patties:

    • 1 package (400 grams) firm Tofu
    • 1 ripe (soft) Avocado
    • 2.5 Cups vegan bread crumbs
    • 2 Cups Oatmeal
    • 1 Onion
    • 3 tbsp. Ketchup (or tomato sauce)
    • 3 tbsp. Italian seasoning
    • 1/2 tsp. minced garlic (or half a garlic clove)
    • a little salt and pepper

    - Dice the Tofu and Avocado in bigger pieces and dice the oncion in small, fine pieces
    - Put it in a bigger bowl and mush them with a fork (or a 'potato masher' )
    - Add all the other ingredients and work into a firm ''dough'' (I use my hands but it can be done with a fork too)
    - Once you're able to form one big tofu ball, it's right. If its slightly sticky, that's ok. If its too sticky to make patties, add some oatmeal or bread crumbs.
    - Preheat a pan with 2-3 tbsp. of oil / a little above medium heat.
    - Now form little patties with a spoon or your hands
    - Fry the patties until gold brown on both sides
    - Bon appetite

    If you dont like the patties too juicy, try to flatten them a little through the spatula in the pan.
    I made them about 1/4" thin.

    If you dont mind I'd like to share another recipe I tried today.
    I planned on making patties again because my husband asked me to but we didnt have bread crumbs anymore, so I just got a few things together and tried something new

    I was kind of in a rush so I accidently used a little too much oil, but besides that it turned out delicious! (man I'm turning into a cook )

    First I cut up half a package of tofu, half a bell pepper and 1/4 of an onion and two thin spring onions. I fried it and added one tbsp. Gefro-soup seasoning, thyme, salt and pepper.
    I was super afraid I was gonna mess it up because I never made something like this before.. especially without any recipe. So I made some Couscous besides that and added italian seasoning and the gefro soup seasoning to the couscous.
    When it was all done I served my husband a plate of my rushed recipe and was prepared for anything. But he loved it

    This is how it looked like:



    Although it was good I will use less oil next time and fry the Tofu a little longer, before I add the onions and bell pepper.

    I can say both of these vegan cuisines are very good! Im eating one of them right now!
