I am in serious need of meal ideas! My fiance, who is not vegan, was just instructed by her doctor to go on a low FODMAP diet. I am vegan, and I often cook dinner, which is always vegan and gluten free (since she was just restricted from gluten until this week). Now that she is on the low FODMAP diet, I have very few ideas of what I can cook us for dinner.
Here are some of the things she can't eat:
-Onion (and anything in the onion family)
-Garlic
-Mushroom
-Broccoli
-Cabbage
-Calliflower
-Asperigus
-Sweet corn
-Eggplant (although she may be able to eat this, we're not sure)
-Beets
-Brussel sprouts
-Green bell peppers
-Peas
-Beans and legumes (ALL beans, including soy beans, and legumes)
-Okra
-Apples
-Mango
-Pear
-Watermelon
-Apricot
-Avacado
-Blackberries
-Cherries
-Peaches
-Plums
-Gluten (so no spelt, wheat, rye)
-Agave syrup
The proteins she can eat are quinoa, tofu (soybeans are not okay but tofu is), small quantities of nuts, and animal proteins. Obviously other foods have protein, but her doctor also told her that she needs to eat more protein than she had been, so it would be good if the meals had a higher protein food, like quinoa.
So, does anyone know what kind of meals I could make? So far, my fiance and I have come up with a stir fry with sweet potatoes, carrots, bok choy, red/orange peppers, and tofu ; quinoa and almond stuffed acorn squash ; baked teryaki tofu, sweet potatoes, and carrots ; gluten free pasta with tomato sauce; and polenta with vegetables.
I have looked for FODMAP vegan/vegetarian cookbooks but haven't found any. My fiance found a short book with some vegetarian options, but not a lot. I have looked online and haven't found many recipes. If we can't find vegan low FODMAP meals to eat together, I am going to end up cooking vegan for me and she will end up eating something non-vegan/non-vegetarian for herself. I like to cook vegan food so that we BOTH eat vegan and can eat the same thing. So, any suggestions would be greatly appreciated!!!
